  2. Prepare of Onion.
  3. Provide of Celery.
  4. Prepare of Carrots.

  2. Add dried scallops and water till the brim and let it boil and simmer for 1-2 hours, finally add celery.

Heat the oil in a large saucepan over a medium heat, tip in the celery, garlic and potatoes and coat in the oil. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often). Pour in chicken stock and bring to the boil. Bring back the boil and lower the heat. Puree the soup with a hand blender, liquidiser or food processor until smooth.
